Ingredients

1 kilogram of White corn

3 Pig hooves

2 Pig faces

1 Carrot

1 Chayote

1 cup of Lime

2 Chopped sweet peppers

1 Chopped garlic head

1 Chopped onion

1 Chopped culantro castilla roll

1 Sprig of oregano

1 pinch of Annatto

1 pinch of Salt

Preparation

Step 1 : To prepare this recipe, it is recommended to cook the corn the day before in a pot with enough water until it is almost dry.

Step 2 : Then, dissolve the lime in water and add it slowly to the corn, avoiding the lime sediment, repeating the operation three or four times.

Step 3 : Once the lime is added, let it boil so that the corn peel.

Step 4 : Then, wash the corn in a container with holes to remove the husk and impurities.

Step 5 : On the other hand, cook the hooves and pig faces until they are almost tender, chop the ears and snouts into small pieces.

Step 6 : In a large pot, cook the corn together with the meats, chayote, carrot, peppers, garlic, onion, culantro, oregano, annatto, and salt to taste.

Step 7 : Let the mixture boil until everything is tender and ready to enjoy.
