Traditional Green Plantain Soup
Ingredients
4 liters of Water
4 Chicken bouillon cubes
2 tablespoons of Dried thyme
2 tablespoons of Dried basil
1 teaspoon of Cumin
½ teaspoon of Black pepper
2 Grated tomatoes
1 cup of Chopped onion
1 cup of Spicy sweet chili
3 Chopped garlic
2 tablespoons of Chopped leek
2 tablespoons of Chopped chives
1 Large bunch of cilantro
2 tablespoons of Worcestershire sauce
2 tablespoons of Soy sauce
4 Green plantains
4 tablespoons of Oil
1 Lemon juice
Oil
2 Grated carrots
12 tablespoons of Custard
Preparation
Step 1 : To prepare this recipe, first peel the plantains and soak them in water with lemon juice to remove stains.
Step 2 : Then, finely chop the onion, spicy sweet chili, garlic, chives, and leek.
Step 3 : Sauté these ingredients in oil.
Step 4 : Add to the sautéed mixture the grated tomato and carrot, thyme (just the leaves), basil, water, bouillon cubes, and the remaining ingredients, except the plantains and cilantro.
Step 5 : Cook over low heat until it boils.
Step 6 : Meanwhile, drain the plantains and cut them into thick slices for frying.
Step 7 : Once golden, remove them, drain, and crush them using a special patacón press or a kitchen mallet.
Step 8 : Cut the slices into pieces and add them to the boiling broth.
Step 9 : Adjust the flavors, add salt if necessary, and add the finely chopped cilantro.
Step 10 : Let it simmer for 10-15 minutes until the broth thickens.
Step 11 : Finally, serve hot with chopped cilantro and a teaspoon of custard.
