Ingredients

2 Small carrots

2 Large potatoes

1 Medium chayote

1 Medium sweet potato

1 Medium tender squash

1 Medium yucca stem

1 Small tiquisque

1 liter of Milk

3 Eggs

2 tablespoons of Oil

1 pinch of Achiote

1 pinch of Salt

Preparation

Step 1 : To begin, wash and cut all the vegetables into small pieces.

Step 2 : Sweat the vegetables in water that just covers them, following this order: first add the achiote and salt, then add the carrots.

Step 3 : After a while, include the tiquisque; then add the potatoes, chayote, and sweet potato, and finally, when they are al dente, add the squash.

Step 4 : In another container, beat the eggs and fry small tortillas in a hot skillet.

Step 5 : When the vegetables are almost cooked, add the milk.

Step 6 : Once the soup is ready, add the tortillas and serve piping hot.
