Tortilla Soup
Ingredients
2 Small carrots
2 Large potatoes
1 Medium chayote
1 Medium sweet potato
1 Medium young pumpkin
1 Medium yuca stalk
1 Small tiquisque
1 liter of Milk
3 Eggs
2 tablespoons of Oil
1 pinch of Annatto
1 pinch of Salt
Preparation
Step 1 : To begin, wash and cut all the vegetables into small pieces.
Step 2 : Sauté the vegetables in water just covering them, following this order: first add the annatto and salt, then add the carrots.
Step 3 : After some time, include the tiquisque; then add the potatoes, chayote, and sweet potato, and finally, when al dente, add the pumpkin.
Step 4 : In another container, beat the eggs and fry small tortillas in a very hot skillet.
Step 5 : When the vegetables are almost cooked, add the milk.
Step 6 : Once the soup is ready, add the tortillas and serve very hot.
