Poor Man's Soup
Ingredients
250 grams of Tomato paste
3 cups of Water
1 Cilantro roll (cilantro stems)
1 Finely chopped onion
3 Medium potatoes
1 pinch of Salt
2 Hard-boiled eggs
Basil
1 pinch of Pepper
Preparation
Step 1 : To prepare this recipe, start by washing and peeling the potatoes, then cut them into sticks or slices.
Step 2 : Next, place them in a pot with water, tomato paste, onion, cilantro, salt, and pepper.
Step 3 : Cook everything over medium heat for about 30 minutes, or until the potatoes are tender.
Step 4 : Once ready, add the cooked eggs and basil.
Step 5 : To cook the eggs, put hot water in a pot and add the eggs.
Step 6 : Let them boil for 10 to 15 minutes.
Step 7 : After cooking, transfer them to a bowl with cold water and peel them.
