Pozol Tico
Ingredients
1 kilogram of Corn
1 kilogram of Pork meat
2 liters of Water
1 tablespoon of Pepper
1 tablespoon of Cumin
1 tablespoon of Salt
3 Chopped garlic
1 tablespoon of Whole oregano (not ground)
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Cook the corn and let it cool, preferably from one day to the next.
Step 2 : Then, wash the meat and marinate with pepper, cumin, garlic, and a bit of oregano a few hours in advance to enhance the flavors.
Step 3 : Place the meat in a pot with water and cook for about 30 minutes until it starts to soften.
Step 4 : At this point, add the corn and season the broth with salt, pepper, and a generous amount of oregano, which is the secret ingredient of a good pozole.
Step 5 : Let it cook for an additional 15 minutes until the meat is nearly shredded, ensuring the flavors are well concentrated.
Step 6 : Finally, serve the pozole accompanied by tortillas.
