Ingredients

4 Corvina heads and spines

1 kilogram of Cassava

½ kilogram of Potato

3 Green plantains

1 kilogram of Ocumo

1 Medium squash

Sofrito base (sweet pepper, leek, onion, garlic)

1 pinch of Salt

Fresh cilantro

Lemon

1 pinch of Pepper

Preparation

Step 1 : First, place the heads and spines in a pot with 2 and a half liters of water and salt, and bring to a boil for an hour to concentrate the flavors.

Step 2 : Then, add the vegetables and adjust the salt.

Step 3 : When the vegetables are soft (approximately 30 minutes), add the sofrito and let it boil for another 5 minutes.

Step 4 : Once this is done, remove the pot from the heat and add chopped cilantro and sweet pepper.

Step 5 : Let the soup rest for a while before serving it hot.

Step 6 : At the moment of serving, it is recommended to add a splash of lemon to enhance the flavors.
