Ingredients

1 kilogram of Pork posta

½ kilogram of Pork cheek

6 Garlic cloves

1 tablespoon of Pepper

1 tablespoon of Complete seasoning

10 Fresh oregano sprigs

1 tablespoon of Achiote

1 tablespoon of Lard

1 tablespoon of Cracked corn

Spicy chili

Pig ears and tail

Preparation

Step 1 : To prepare this delicious pozol, it is recommended to start the day before by washing the chopped meats very well and then covering them with hot water.

Step 2 : Let them rest covered for 10 minutes.

Step 3 : Subsequently, add the garlic, pepper, complete seasoning, and salt, and let the mixture rest for 2 hours.

Step 4 : Then add more water, lard, achiote, salt to taste, and oregano, and boil everything for 30 minutes over high heat.

Step 5 : Reduce the heat and leave the meats on the heat until they are tender, making sure they are always covered with water.

Step 6 : Wash the corn well and place it in a pot with enough boiling water, cooking it and stirring occasionally.

Step 7 : Once soft, remove it from the heat, let it cool so it finishes popping, and then rinse it with cold water.

Step 8 : The next day, remove some fat from the meats and add water if they are dry, then boil them.

Step 9 : Drain the corn and add it to the meats, bring it to a boil and season it with a sauté.

Step 10 : To prepare the sauté, fry in oil chili, onion, celery, cilantro, 2 chopped tomatoes with complete seasoning, Worcestershire sauce, and spicy chili to taste, and then add it to the pozol.

Step 11 : Cook over low heat to thicken.
