Costa Rican Patacones Soup
Ingredients
1 kilogram of Costillas de res, posta y hueso de rabo
1 pinch of Salt
3 Garlic cloves
1 Peeled and chopped tomato
1 Cilantro root
1 Chopped onion
2 Sprigs of thyme
Oregano leaves
4 Green plantains
Black pepper
Oil for frying
Preparation
Step 1 : Season the meat and place it on the fire until tender, then add the tomato, garlic, cilantro, onion, celery, thyme, oregano, and pepper.
Step 2 : Let it boil for five minutes.
Step 3 : Meanwhile, peel the plantains and cut them into one-inch slices.
Step 4 : In a pot with enough hot oil, fry the plantain slices until they are half cooked, remove them, flatten them with a tortilla press, and fry them again until they are toasted.
Step 5 : Remove the patacones and add them to the soup.
Step 6 : Finally, serve and enjoy.
