10 Chayotes
10 Eggs
500 grams of Fresh quelites
Salt, pepper and cumin
Preparation
Step 1 : Wash and chop the quelites.
Step 2 : Peel and cut the chayotes into squares.
Step 3 : Beat the eggs until fluffy, add the rest of the quelites and a pinch of salt.
Step 4 : Fry the tortillas and set aside.
Step 5 : In a pot over the fire with boiling water, add the chalotes and quelites, cooking until tender.
Step 6 : Season with salt, pepper, and a touch of cumin.
Step 7 : Add the cut tortillas, stir everything together, and adjust the seasoning.
