To prepare the Black Bean Soup, the beans should be soaked overnight with baking soda.
Then sauté the onion and ham, add broth, seasonings, and let it cook slowly.
Mash a cup of beans and add them to thicken the soup.
Cook the ham with chili pepper and rum, then add the sautéed ingredients to the beans and continue cooking.
Serve each portion with sour cream.
Black Bean Soup
Ingredients
½ kilogram of Black beans
4 cups of Water
1 cup of Chopped onion
1 tablespoon of Butter
1 Broth cube
350 grams of Fine ham
2 Bay leaves
½ teaspoon of Thyme
½ teaspoon of Oregano
½ teaspoon of Salt
1 Chili pepper
½ teaspoon of Cumin
1 Chopped green bell pepper
¾ cup of Rum
1 cup of Sour cream
Preparation
Step 1 : The beans should be soaked overnight with a teaspoon of baking soda, then drained and discarded the water.
Step 2 : In a skillet with hot oil, sauté the onion until it is almost golden.
Step 3 : Add the beans, water, broth, ham, and seasonings.
Step 4 : Bring to a boil, reduce the heat, cover the pot, and cook slowly until the beans are very tender.
Step 5 : Take 1 cup of beans and mash them well, then return this bean purée to the skillet to thicken the rest of the beans.
Step 6 : In another skillet, cook the diced ham, chili pepper, and bay leaf for a couple of minutes, then add the rum.
Step 7 : Incorporate the sautéed ingredients into the beans and cook on low heat for another 15 minutes.
Step 8 : Finally, serve each portion with two tablespoons of sour cream.
