Ingredients

2 Chicken breasts

2 Onions, finely chopped

1 can of Tomatoes

3 Garlic cloves

1 Carrot

1 Leek

1 Celery

3 cups of Chicken broth

1 tablespoon of Smoked dried chipotle chili

Cilantro for garnish

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Cut the chicken breasts into pieces and set aside.

Step 2 : Then, in a blender, process the tomatoes with the dried chili.

Step 3 : In a pot, heat achiote oil and sauté the onions and garlic.

Step 4 : Next, add the tomato and chili mixture and cook for about 5 minutes.

Step 5 : Add the chicken, chopped carrots, leek, and celery, along with the chicken broth.

Step 6 : Season with salt and pepper, and cook for 20 minutes.

Step 7 : Finally, serve hot, garnished with cilantro, and accompanied by tortillas, cheese, and avocado.
