Zucchini Casserole
Ingredients
1 kilogram of Zucchini
1 cup of Chopped onion
4 cups of Diced tomatoes
½ cup of Sweet chili, finely chopped
4 Crushed garlic cloves
1 Celery stalk
1 Panamanian chili
1 cup of Tomato sauce
1 Bunch of parsley
200 grams of Mozzarella cheese
2 Bay leaves
1 pinch of Oregano
Olive oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : First, slice the zucchini and coat them with flour before frying in hot oil.
Step 2 : Then, place them on absorbent paper to remove excess oil.
Step 3 : In a skillet, sauté the onion and garlic until they become translucent.
Step 4 : Add the tomatoes, chili, celery, tomato sauce, and chopped parsley, and season everything with salt, pepper, oregano, and bay leaves.
Step 5 : Add the Panamanian chili and cook the mixture for 10 minutes.
Step 6 : In an ovenproof dish, layer some sauce, then zucchini slices, and top with mozzarella cheese.
Step 7 : Repeat this process and bake at 350°F (180°C) for about 20 minutes, or until the cheese is golden.
