Traditional Tripe in Sauce
Ingredients
1 kilogram of Tripe
2 Sweet peppers
Celery
Leek
Thyme
Cilantro
2 teaspoons of Cornstarch
1 Basil leaf
Preparation
Step 1 : The tripe is cleaned by trimming all the edges, then boiled in enough salted water along with the aromatic herbs.
Step 2 : Once cooked, it is removed from heat and allowed to cool.
Step 3 : Next, the herbs and the tripe's connective tissue are blended into a smooth mixture.
Step 4 : The blended sauce is heated and two teaspoons of cornstarch dissolved in water are added.
Step 5 : The tripe is chopped into small cubes and added to the sauce.
Step 6 : Finally, serve with white rice or mashed potatoes.
