Tico-style Cazuela
Ingredients
500 grams of Diced pork
1 kilogram of Diced chicken
500 grams of Black beans
3 cups of Finely chopped onions
2 cups of Tomatoes, diced
4 Crushed garlic cloves
Cilantro leaves
2 tablespoons of Worcestershire sauce
Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The beans were soaked for a few hours and then cooked in water for 45 minutes.
Step 2 : Afterward, they were drained, and the broth was reserved.
Step 3 : A puree was made with some of the beans and reserved.
Step 4 : The pork and chicken were seasoned with salt, pepper, and Worcestershire sauce, then seared in a skillet with a little oil.
Step 5 : They were set aside.
Step 6 : In a large pot, onions and garlic were sautéed until caramelized.
Step 7 : Then tomatoes and the bean broth were added.
Step 8 : When boiling, the meat and chicken were incorporated.
Step 9 : Seasoned with salt and pepper, it was cooked over low heat for about 20 minutes.
Step 10 : Next, the beans were added, and it continued cooking for 10 minutes.
Step 11 : To thicken the preparation, a bit of the bean puree could be added.
Step 12 : To serve, the dish was garnished with chopped cilantro and accompanied by boiled yucas and patacones.
