Ingredients

4 Preferably red sweet peppers

½ kilogram of Special ground beef (fat-free)

3 Eggs

1 Grated ripe tomato

1 Finely chopped onion

3 Finely chopped garlic cloves

1 pinch of Salt

Vegetable oil

Grated cheese

1 pinch of Pepper

Preparation

Step 1 : To prepare this recipe, it is necessary to start by peeling the sweet peppers, roasting them on the stove's open flame until the skin is black.

Step 2 : After that, let them cool in a closed plastic bag so they sweat, facilitating the removal of the skin.

Step 3 : Once peeled, remove the seeds and cut them where the stem is, which will be where they will be filled.

Step 4 : Next, sauté the onion and garlic in a little oil, add the meat and cook until it changes color.

Step 5 : Then add a grated tomato and cook until done.

Step 6 : Once this is done, remove from heat and let it cool.

Step 7 : Subsequently, proceed to fill the peppers with the ground meat.

Step 8 : In another container, beat the egg whites until stiff peaks, add the yolks and fold in gently, adding a pinch of salt and pepper to maintain the stiff peaks.

Step 9 : Next, heat a pan with oil and pour in some of the egg mixture, as if making an omelette.

Step 10 : Wait for it to cook underneath, but the omelette should remain uncooked on top.

Step 11 : Next, place one of the filled peppers on the omelette and wrap it with the already cooked sides.

Step 12 : Once the egg is fully cooked, remove from heat, place in a baking dish, add cheese to taste and tomato sauce.

Step 13 : Bake until the sauce boils.

Step 14 : Once ready, remove from the oven and serve.
