Ingredients

4 cups of Washed rice

1 ½ kilogram of Shrimp

1 kilogram of Chopped chicken

1 teaspoon of Ground garlic

1 Chopped onion

2 Sweet chili

1 Cilantro bundle

1 teaspoon of Annatto

½ kilogram of Ripe tomato

1 teaspoon of Black pepper

2 tablespoons of Oil

2 teaspoons of Salt

Preparation

Step 1 : Peel and clean the shrimp, reserving the broth obtained by boiling the shells in half a liter of water.

Step 2 : Meanwhile, cut the chicken into not-too-small pieces and cook it in a little water with salt, ground garlic, chopped onion, and sweet chili.

Step 3 : Also, reserve the resulting broth.

Step 4 : Next, cook the rice using the chicken and shrimp broth.

Step 5 : Meanwhile, dice and peel the tomato, then sauté it in a pan with oil, sweet chili, onion, and garlic.

Step 6 : Add annatto, pepper, sauce, sugar, salt, and the reserved broth to make a sauce.

Step 7 : Once the tomato is cooked, add the shrimp and cook for five minutes over moderate heat.

Step 8 : Then, add the chicken.

Step 9 : Next, incorporate the previously cooked and cooled rice along with cilantro, stirring gently.

Step 10 : Let it cook on low heat for ten minutes so the rice absorbs the liquid.

Step 11 : Finally, serve the dish garnished with strips of red pepper.
