Rice with shrimp and chicken
Ingredients
4 cups of Washed rice
1 ½ kilogram of Shrimp
1 kilogram of Chopped chicken
1 teaspoon of Ground garlic
1 Chopped onion
2 Sweet pepper
1 Culantro leaf
1 teaspoon of Annatto
½ kilogram of Ripe tomato
1 teaspoon of Black pepper
2 tablespoons of Oil
2 teaspoons of Salt

Preparation
Step 1 : Peel and clean the shrimp, reserving the broth obtained from boiling the shells in half a liter of water.
Step 2 : On the other hand, cut the chicken into not too small pieces and cook it in a little water with salt, ground garlic, chopped onion, and sweet pepper.
Step 3 : Also reserve the resulting broth.
Step 4 : Next, prepare the rice by cooking it in the chicken and shrimp broth.
Step 5 : Meanwhile, chop and peel the tomato, then sauté it in a pan with oil, sweet pepper, onion, and garlic.
Step 6 : Add annatto, pepper, salt, sugar, salsa, and the reserved broth to make a sauce.
Step 7 : When the tomato is cooked, add the shrimp and cook for five minutes over moderate heat.
Step 8 : Then add the chicken.
Step 9 : Subsequently, add the previously cooked and cold rice, along with culantro, stirring carefully.
Step 10 : Let it cook over low heat for ten minutes so the rice absorbs the liquid.
