Chayote Hash with Small Tortillas
Ingredients
3 kilograms of Potatoes
4 cups of Chayote leaves
Cilantro
1 pinch of Pepper
1 pinch of Salt
Sauté mix
1 Chopped onion
¼ teaspoon of Annatto
2 Finely chopped garlic cloves
½ Finely chopped sweet chili
Oil
Corn tortillas
Preparation
Step 1 : In a pot, add the potatoes and cook over low heat with the lid on until the potatoes are tender.
Step 2 : Then add the chayote leaves and turn off the heat.
Step 3 : Drain the water and let the potatoes cool so they can be chopped along with the chayote leaves.
Step 4 : Make a sauté with these ingredients and add the potatoes with the chayote leaves to the sauté.
Step 5 : If desired, you can add ¼ teaspoon of pepper, ¼ teaspoon of cumin, and cilantro to taste.
Step 6 : Serve with tortillas.
