Ingredients

3 tablespoons of Achiotes

2 Finely chopped onions

2 Finely chopped sweet peppers

6 Chicken thighs halved

2 Cloves of garlic

3 kilograms of Potatoes

2 Peeled and cubed tiquizques

2 Peeled and cubed ñampis

2 Peeled and cubed sweet potatoes

1 teaspoon of Dried oregano

2 Peeled tomatoes

10 Culantro leaves

3 cups of Chicken broth

Cumin

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, add enough oil to sauté the achiote, finely chopped onion, and chili.

Step 2 : Add tiquizque, ñampis, and sweet potato, and continue sautéing.

Step 3 : Then, add tomato, oregano, and culantro coyote, letting it cook for a few more minutes.

Step 4 : Pour in the chicken broth and season with salt and pepper to taste.

Step 5 : Let it cook until the vegetables are tender, approximately 35 minutes.

Step 6 : Once ready, it can be served.
