Frito is a dish that combines ingredients such as offal, heart, chili, onion, garlic, celery, oregano, salt, and pepper, cooked slowly until the meat is tender.
Plantains are added to give color to the broth, adjusting the salt to taste and cooking until the plantains are soft.
To serve, it is accompanied with white rice or corn tortillas.

Ingredients
½ kilogram of Offal by type (offal and heart)
1 Sweet chili pepper
1 Chopped onion
2 Chopped garlic
1 Finely chopped celery stalk
2 Peeled plantain pieces
Cilantro
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The offal and heart are carefully washed and cut into small pieces.
Step 2 : They are placed in a pot with water, chili, onion, garlic, celery, oregano, salt, and pepper, and cooked for about 45 minutes until the meat is tender.
Step 3 : Once the meat is soft, the chopped plantains are added to release their color and turn the broth dark.
Step 4 : Salt is adjusted to taste and cooked until the plantains are soft.
Step 5 : To enjoy, serve the frito accompanied by white rice or corn tortillas.
