Frito is a dish that combines ingredients such as offal, heart, chili, onion, garlic, celery, oregano, salt, and pepper, cooked slowly until the meat is tender.
Green bananas are added to give color to the broth, adjusting salt to taste and cooking until the bananas are soft.
To serve, it is accompanied with white rice or corn tortillas.

Ingredients
½ kilogram of Assorted offal (offal and heart)
1 Sweet pepper
1 Chopped onion
2 Chopped garlic cloves
1 Finely chopped celery stalk
2 Peeled green bananas
Cilantro
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The offal and heart are carefully washed and cut into small pieces.
Step 2 : They are placed in a pot with water, chili, onion, garlic, celery, oregano, salt, and pepper, and cooked for about 45 minutes until the meat is tender.
Step 3 : Once the meat is tender, add the cut bananas to release their color and the broth takes on a black tone.
Step 4 : Adjust salt to taste and cook until the bananas are soft.
Step 5 : To enjoy, the Frito can be served accompanied by white rice or corn tortillas.
