Ingredients

400 grams of Cured beef

1 kilogram of Yuca

1 tablespoon of Butter

1 Large tomato

2 Eggs

Annatto

1 tablespoon of Worcestershire sauce

1 Celery stalk

1 tablespoon of Chopped cilantro

½ Chopped sweet chili pepper

3 Garlic cloves

1 Chopped medium onion

1 Sweet chili pepper

1 pinch of Salt

2 tablespoons of Coconut oil

1 pinch of Salt

Oil for frying

1 pinch of Pepper

Preparation (simple version)

Step 1 : Cook the cured beef in a little water with sweet chili pepper, cilantro, onion, celery, and salt for 35 minutes, then grind in a food processor. Enyucados - Preparation - Step 1
Step 2 : Boil the peeled yuca in salted water until soft and grind while hot, kneading with butter. Enyucados - Preparation - Step 2
Step 3 : Prepare a filling in a skillet with coconut oil, annatto, tomato, Worcestershire sauce, and ground beef, adjusting salt and pepper. Enyucados - Preparation - Step 3
Step 4 : Form tortillas with the yuca mixture, place a spoonful of filling in the center, close into cylinders, and fry in hot oil until golden. Serve hot. Enyucados - Preparation - Step 4

Preparation

Step 1 : To prepare this delicious dish, first cook the cured beef in a little water for about 35 minutes, along with the sweet chili pepper, cilantro, onion, celery, and salt.

Step 2 : Once cooked, grind it in a food processor.

Step 3 : Next, boil the peeled yuca in salted water until soft, without it puffing up.

Step 4 : Grind the hot yuca and knead it well with the butter.

Step 5 : Then, in a skillet, heat the coconut oil and add the annatto, peeled and chopped tomato, Worcestershire sauce, and ground beef.

Step 6 : If needed, add a bit of water, adjust salt and season with pepper to taste.

Step 7 : Subsequently, spread the yuca into tortilla shapes on a flat surface, place a spoonful of the meat mixture in the center, and close to form small cylinders.

Step 8 : Finally, fry in hot oil until golden brown.

Step 9 : Place on absorbent paper and serve hot.
