Costa Rican Style Stuffed Pipián with Shrimp
Ingredients
8 Tender pipiáns
2 Whole eggs
½ kilogram of Cleaned and chopped shrimp
3 Crushed garlic cloves
¼ teaspoon of Ajinomoto
¼ teaspoon of Pepper
¼ cup of Finely chopped sweet chili
¼ cup of Finely chopped onion
1 Chopped cilantro sprigs
½ Sliced sweet chili
½ Sliced onion
½ teaspoon of Chinese sauce
1 teaspoon of Salt
1 teaspoon of Cornstarch
Preparation
Step 1 : The shrimp are seasoned with chili, garlic, onion, Worcestershire sauce, salt, pepper, and Ajinomoto.
Step 2 : The pipiáns are perforated along the length and center, then filled with the prepared shrimp. They are placed in a skillet with the remaining ingredients, covered, and cooked over low heat for about 25 minutes, excluding the cornstarch.
Step 3 : The cornstarch is dissolved with a little water and added once the pipiáns are soft to thicken the sauce.
Step 4 : Chopped eggs in halves are added on top, and served with tortillas or potatoes.
