Costa Rican Seafood Stew
Ingredients
2 kilograms of Mixed seafood (shrimp, squid, mussels)
1 kilogram of Fish heads (for the consommé)
2 liters of Water
2 Celery stalks
1 Leek
1 Sweet pepper
2 Bay leaves
2 tablespoons of Corn oil
6 Crushed garlic cloves
1 Finely chopped onion
4 Large ripe tomatoes, blended
1 teaspoon of Sugar
½ teaspoon of Salt and fresh oregano
1 Bouquet of cilantro
Preparation
Step 1 : To prepare the dish, start by making a broth with 1 liter of water and the fish heads, along with a spice mix that includes garlic, chili, and onion.
Step 2 : This broth is cooked until a good fish consommé is obtained.
Step 3 : On the other hand, prepare a thick blended tomato sauce.
Step 4 : To do this, sauté garlic and onion in oil and then add the blended tomato, oregano, salt, and sugar.
Step 5 : The sauce is cooked over medium heat for 15 minutes before adding chopped cilantro.
Step 6 : Once ready, set aside.
Step 7 : In a separate pot, cook the squid in 1 liter of water with salt for about 45 minutes.
Step 8 : Subsequently, unify oil in another pot and sauté the previously cooked squid, along with shrimp, mussels, and the remaining seasonings.
Step 9 : Cook everything for 10 minutes and then add the prepared tomato sauce.
Step 10 : Let the mixture simmer for another 10 minutes.
Step 11 : Finally, serve the dish accompanied by potatoes and white rice.
