Costa Rican Enyucados
Ingredients

400 grams of Cured meat
1 kilogram of Cassava
1 tablespoon of Butter
1 Large tomato
Annatto
1 tablespoon of Worcestershire sauce
1 Celery stalk
1 teaspoon of Chopped cilantro
½ Chopped sweet chili
3 Garlic cloves
1 Chopped onion
1 Sweet chili
1 pinch of Salt
2 tablespoons of Coconut oil
1 pinch of Salt
Frying oil
1 pinch of Pepper

Step 1 : To prepare this recipe, start by placing the meat, sweet chili, cilantro, onion, celery, and salt in 1 liter of water and cook for 35 minutes.
Step 2 : Once the meat is cooked, blend it in a food processor.
Step 3 : Meanwhile, peel the cassava and cook it in salted water until soft.
Step 4 : Once ready, mash it while still hot and knead with butter.
Step 5 : In a skillet with hot coconut oil, sauté the annatto, peeled and chopped tomato, Worcestershire sauce, and ground meat.
Step 6 : Add a little water if necessary.
Step 7 : Then, spread the cassava into tortillas in the skillet and place one spoonful of filling in the center.
Step 8 : Close to form small cylinders and fry in hot oil until golden brown.
Step 9 : Drain on paper towels and serve hot.
