Chickpeas with Pork Ribs

Ingredients

1 pound of Chickpeas

½ pound of Pork ribs

1 tablespoon of Lard

1 Small onion

3 Garlic cloves

1 Small sweet chili

1 Bell pepper

1 Medium tomato

Cilantro

1 pinch of Salt

Cooked white rice as usual

1 pinch of Pepper

Preparation

Step 1 : The chickpeas are washed a day in advance, then peeled and cooked with ribs in boiling water for about 1 hour until they are tender.

Step 2 : Turn off the heat and set aside in the same pot.

Step 3 : In a heated saucepan with garlic, onion, tomato, sweet chili, and bell pepper, peeled and seedless, cut into strips and sauté until golden.

Step 4 : Then, add to the previously reserved chickpeas.

Step 5 : Season with salt and pepper to taste and cook over low heat until the flavors meld into the sauté.

Step 6 : Leave with a thick broth, add cilantro at the end, and serve hot with white rice.
