Chickpeas with Pork
Ingredients
1 Carrot
1 Onion
1 Potato
1 Spring onion
1 Bell pepper
1 Piece of pumpkin
2 Cloves of garlic
400 grams of Cooked chickpeas
½ kilogram of Pork meat
½ kilogram of Crushed tomatoes
Salt, pepper, cumin, bay leaf, garlic powder, rosemary
1 Stalk of celery
½ liter of Water or broth
Preparation
Step 1 : Chop the onion, potato, celery, bell pepper, garlic, spring onion, and carrot into small cubes.
Step 2 : Cut the pumpkin into pieces and set aside with the potato for later.
Step 3 : Season the meat with salt and pepper, then place it in a pot with a little olive oil to sear until golden brown on all sides.
Step 4 : Once the meat is golden brown, remove it from the pot and set it aside.
Step 5 : In the same pot, add the vegetables (except for the potato and pumpkin) and cook until soft, adjusting the seasoning if needed to release their juices.
Step 6 : Once the vegetables are cooked, add the crushed tomatoes and mix well.
Step 7 : Add 2 cups of broth or water, continue mixing, and add the chickpeas and meat.
Step 8 : Cover with more water, season to taste, and add the potato and pumpkin.
Step 9 : Cover the pot and let it cook over medium-low heat for a few minutes.
