Ingredients
2 ½ pounds of Chicken thighs (can be whole chicken)
1 Smoked pork chop (with its fat)
1 Large onion
1 Large chili or bell pepper
3 Garlic cloves
1 Celery stalk
2 Tomatoes
4 tablespoons of Worcestershire sauce
1 pinch of Pepper
4 tablespoons of Tomato paste
1 Saffron seasoning packet
1 Bunch of vegetables
1 can of Small petit pois
3 tablespoons of Capers
1 ½ pound of Rice
Vegetable oil for browning the chicken
Preparation
Step 1 : To prepare this delicious dish, start by seasoning the chicken with chili, onion, salt, pepper, and crushed garlic cloves, at least three hours before cooking.
Step 2 : Then, in a skillet or pot with hot oil, add the chicken and the pork chop cut into pieces, along with a little sugar to brown.
Step 3 : Next, add the vegetables and a little water, as well as the diluted tomato paste and chicken broth.
Step 4 : Cook everything to obtain a consistent sauce.
Step 5 : Once ready, remove the chicken pieces from the sauce and set aside.
Step 6 : In the remaining sauce in the skillet or pot, add the previously washed and drained rice.
Step 7 : Mix well and let it dry uncovered over medium heat, with the vegetables.
Step 8 : When the rice is dry, reduce the heat, cover, and let it cook for 20 minutes.
Step 9 : After that time, uncover and add the drained petit pois and capers.
Step 10 : Mix everything and let it cook for another 10 minutes.
Step 11 : Then, check that the rice is done.
Step 12 : Finally, serve the rice on a platter with the previously reserved chicken thighs.
