Ingredients

1 kilogram of Rice

1 Whole chicken

1 Tomato

2 Carrots sliced

½ Finely chopped red bell pepper

1 Sprig of parsley

2 Cloves of garlic

1 Bunch of cilantro

1 Finely chopped onion

1 can of Mushrooms

1 can of Drained peas

2 tablespoons of Lizano sauce

1 teaspoon of Annatto

1 can of Tomato paste

2 Bay leaves

Cooking oil

½ teaspoon of Oregano

Salt, pepper, and cumin

Preparation

Step 1 : To begin, cook the rice with the carrots, adding the annatto and the water from the previously cooked chicken with salt, garlic, onion, bay leaf, oregano, and a stalk of celery.

Step 2 : Set this mixture aside.

Step 3 : In a separate pan, sauté the onion and then add the bell pepper, celery, tomato, parsley, garlic, and cilantro along with spices like pepper, Lizano sauce, cumin, salt, and tomato paste.

Step 4 : Let this stew cook slowly for 20 minutes.

Step 5 : Next, shred the chicken without the skin or bones and add it to the sauce.

Step 6 : Let it sweat for 2 minutes over low heat.

Step 7 : Subsequently, gradually incorporate the rice and mix evenly.

Step 8 : Finally, add the mushrooms and peas, let the preparation rest covered for a while, and serve while still hot.
