The Rice a lo Tico, typical of Costa Rica, is a dish that combines vegetables to ensure health for the region's diners. A simple preparation with rice, vegetables, peas, and raisins that results in a delicious side dish. Ideal for sharing with family.
To prepare Rice a lo Tico, gently sauté vegetables in hot oil, then add raw rice with Ajino-moto, salt, and pepper.
Fry for a few minutes and then add boiling water, cooking over low heat.
Finally, add peas and raisins to enjoy it as a side to your dishes.
Rice a lo Tico
Ingredients
2 cups of Raw rice
4 cups of Boiling water
3 tablespoons of Soy oil
¼ cup of Grated carrot
¼ cup of Finely chopped onion
¼ cup of Finely chopped celery
1 Peeled diced tomato
1 can of Peas
2 tablespoons of Raisins
1 pinch of Salt
1 pinch of Ajinomoto or monosodium glutamate
1 pinch of Pepper
Preparation
Step 1 : In a pot with hot oil, lightly sauté all the vegetables except the peas.
Step 2 : After about 2 or 3 minutes, add the raw rice, Ajino-moto, salt, and white pepper.
Step 3 : Fry the rice and vegetables over medium heat for approximately 3 minutes.
Step 4 : Then add boiling water, cover the pot, reduce the heat, and let it cook slowly for 15 minutes.
Step 5 : Turn off the heat and wait for the rice to finish drying.
Step 6 : Finally, incorporate the peas and raisins, and serve hot as a side dish.
