2 Green plantains

4 cups of Water

1 Small red onion, sliced very thinly

2 Finely chopped garlic cloves

2 Diced red bell peppers

½ cup of Finely chopped cilantro leaves

2 teaspoons of Apple cider vinegar or rice vinegar

¾ cup of Lime juice

¾ cup of Orange juice

1 pinch of Salt
