Black Bean Cajeta
Ingredients
500 grams of Cooked black beans
4 cups of Sugar
6 cups of Milk
¾ cup of Raisins
¼ cup of Rum
Preparation
Step 1 : The cooked beans are placed in a processor to make a puree, which is then passed through a sieve.
Step 2 : Next, a pot is brought to heat and the bean puree, sugar, and milk are added.
Step 3 : It is cooked over medium low heat, stirring occasionally for about an hour and a half to prevent lumps from forming and sticking to the bottom of the pot.
Step 4 : After that time, add the raisins and cook for a few more minutes.
Step 5 : When the mixture is quite thick, add the rum and continue cooking until it comes off the bottom of the pot.
Step 6 : Once the desired consistency is achieved, remove from heat and let it cool.
Step 7 : Once the preparation is cold, form balls and let them rest on a tray.
