Ayote Pudding

Ayote pudding, with its smooth consistency and sweet flavor, is a traditional dessert in Costa Rica. The preparation includes cooking the ayote, making a purée with its pulp, and mixing it with eggs, butter, flour, and sugar. A perfect delight to accompany a good cup of coffee.

Ayote Pudding is prepared by cooking the seasoned ayote, removing the peel, and making a purée.

Then, eggs, butter, flour, sugar, salt, vanilla, and raisins are mixed together.

The batter is poured into a mold and baked until a knife inserted comes out clean.

After cooling, it is cut into portions and enjoyed with a cup of coffee.

A delight for any time of day.

Ingredients

1 kilogram of Puréed ayote

4 Eggs

2 cups of Flour

1 teaspoon of Baking powder

1 teaspoon of Vanilla extract

1 pinch of Salt

½ cup of Sugar

1 Butter stick

Raisins

Preparation

Step 1 : To prepare this delicious ayote bread, first cook seasoned ayote for 20 minutes.

Step 2 : Then, peel and make a purée with the pulp, which can be left in a strainer.

Step 3 : In a bowl, add eggs and melted butter to this purée.

Step 4 : Gradually incorporate the flour and baking powder, also adding sugar, salt, and vanilla extract.

Step 5 : Constantly stir with a wooden spoon and add the raisins at the end.

Step 6 : Once the batter is consistent, grease and flour a baking pan and pour the mixture into it.

Step 7 : Bake at 350°F for 40 minutes.

Step 8 : To check if it is thoroughly cooked, insert a knife, and if it comes out clean, remove from the oven.

Step 9 : Finally, let it cool before cutting it into portions and enjoying it with a cup of coffee.
