Ripe cooked plantain, peeled and mashed, is mixed with sugar, cinnamon, egg, and margarine.
The resulting paste, filled with beans and cheese, is rolled and baked at 350°C for 25 minutes.

Ripe Plantain Roll
Ingredients
3 Firm ripe plantains
1 tablespoon of Ground cinnamon
1 tablespoon of Sugar
1 Egg
1 tablespoon of Margarine
1 cup of Black beans (already cooked from the previous day)
1 cup of Grated cheese
Preparation
Step 1 : The plantains are cooked in water with the peel until they are tender.
Step 2 : Then, they are peeled and mashed while still hot.
Step 3 : Sugar, cinnamon, egg, and margarine are added, and everything is mixed very well.
Step 4 : The resulting paste is spread on plastic and filled with beans and cheese.
Step 5 : Subsequently, it is rolled up and placed in a previously greased tray with the seam down.
Step 6 : Finally, bake in a preheated oven at 350°C for 25 minutes.
