Rice and Avocado Salad
Ingredients
2 cups of Rice
1 Ripe avocado
1 can of Sweet corn
1 can of Pickled peppers
Pickled green chilies
1 Bunch of fresh parsley
½ cup of Olive oil
2 tablespoons of Mustard
1 teaspoon of Onion powder
2 Lemons
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a pot, bring enough water to a boil.
Step 2 : Then, add the rice and cook until it pops.
Step 3 : Subsequently, drain and allow it to cool.
Step 4 : Prepare a dressing with olive oil, mustard, salt, and pepper.
Step 5 : Peel and cut the avocado into cubes, adding lemon juice to prevent oxidation.
Step 6 : Next, mix the rice with corn, avocado, peppers, and sliced chilies.
Step 7 : Season with onion, salt, and pepper.
