Ingredients

4 Green plantains

1 kilogram of Tomato

2 Garlic

½ kilogram of Quititeña

1 Onion

1 Sweet pepper

1 Culantro sprig

2 tablespoons of Oil

1 teaspoon of Annatto

Preparation

Step 1 : Boil the 4 plantains with peel until fully cooked.

Step 2 : Meanwhile, cook the meat separately.

Step 3 : Once the plantains are cooked, peel and chop them along with the peel.

Step 4 : Prepare a sauce with the tomatoes and fry the seasonings (sweet pepper, onion, garlic) in oil.

Step 5 : Mix the fried seasonings with the tomato sauce and add the cooked meat.

Step 6 : When the sauce thickens slightly, add the chopped plantains and their peel.

Step 7 : Mix everything well.
