Costa Rican Plantain Ceviche
Ingredients
2 Green plantains
4 cups of Water
1 Small red onion, thinly sliced
2 Cloves of garlic, finely chopped
2 Bell peppers, diced
½ cup of Cilantro leaves, finely chopped
2 teaspoons of Apple or rice vinegar
¾ cup of Lemon juice
¾ cup of Orange juice
1 pinch of Salt
Mayonnaise
Tomato sauce
1 pinch of Pepper
Preparation
Step 1 : Peel the plantains and cook them in boiling water for 20 minutes, making sure they do not become too soft.
Step 2 : Once al dente, drain and cut them into small cubes, letting them cool slightly.
Step 3 : In a large bowl, mix the plantains, onion, garlic, bell peppers, cilantro, vinegar, lemon and orange juices, seasoning with salt and pepper.
Step 4 : Ensure the liquid covers all the ingredients, letting it rest in the refrigerator for at least 30 minutes before serving.
