Codfish Soup
Ingredients
2 pounds of Codfish
8 cups of Water
4 Large potatoes
1 cup of Squash
1 cup of Carrots
2 tablespoons of Olive oil
1 Medium onion
1 cup of Tomatoes
2 Cloves of garlic
2 Peppers
2 Celery stalks
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The codfish should be soaked in cold water the day before and then drained.
Step 2 : Next, it is chopped and seasoned with black pepper.
Step 3 : In a large pot with 8 cups of boiling water and a little salt, cook the potatoes, squash, and carrots for 20 minutes until the potatoes are al dente.
Step 4 : In a hot skillet with oil, sauté the onions, tomatoes, crushed garlic cloves, thyme, and peppers until the onions are translucent.
Step 5 : This mixture is added to the pot with the boiling vegetables.
Step 6 : Add the chopped pepper and reduce the heat.
Step 7 : Put the fish into the boiling pot, mix, and let it simmer for 30 minutes with the pot covered.
Step 8 : During cooking, the potatoes, carrots, and squash break down, thickening the soup.
Step 9 : At the end of the 30 minutes, serve the hot soup in bowls.
