Among the typical dishes of Costa Rica, there is nothing like the iconic Vigorón, a mixture of yucca and marinated vegetables with lemon topped with crispy pork rinds, served in beach almond leaves.

Gastronomy in the province of Puntarenas, as in the national gastronomy, is the expression of the different contributions made by the migrants who arrived in this area of Costa Rica and took advantage of the variety of food resources that nature offered them.

Thanks to this, today we enjoy a delicious multicultural cuisine, based on local foods, and culinary techniques that allowed the fusion of ancestral practices with the contributions of Africans, Chinese and Spaniards.

Along the beaches of Puntarenas, many kiosks offer seafood delicacies based on fresh fish and seafood, such as the famous port Vigorón, of Nicaraguan influence. It is said that a woman, known as La Loca, invented this dish to easily sell it on beach almond leaves during baseball games to make a living; that happened in the mid-20th century.

The Vigorón is a preparation where crispy pork rinds are mixed with a variety of fresh vegetables, tomatoes, spicy chili, and yucca, seasoned with lemon. In the early hours of the day, on the beach shore, you can see women sitting under the shade of an almond tree offering this delicious dish on tree leaves, shouting out all the properties that guarantee them vigor for eternal youth.

The kiosks also sell guacho rice, seafood soup, and fried fish, and to sweeten the palate they offer coconut and milk fudge with itabo flower.
