Coyol wine is a fermented beverage extracted from a native palm tree in the tropical regions of Honduras and the Guanacaste plains of Costa Rica. This beverage is quite inexpensive and is part of the Guanacaste lifestyle, as locals usually sell this beverage that is handmade packaged in bottles.

The production of this beverage takes place in the summer, during which Guanacaste residents cut the palm trees and remove all the leaves, leaving the logs lying down with a certain inclination. They make a cut in the upper part of the palm tree to facilitate the sap flow. These individuals are knowledgeable about the periods in which to carry out this process, as it is influenced by lunar phases, and this will determine the success of the sap collection.

Traditionally, sap collection is done with calabash spoons and is placed in glass bottles for fermentation. This process can last a week or more, depending on the consistency the beverage acquires. For example, it can be smooth, sweet, and light with a consistency similar to saliva and a taste like coconut water. However, if left to ferment for a longer period, it can become thick, sweet, and cause intoxication.

Coyol wine is low in alcohol content, but its consumption should be done with caution. This beverage is highly appreciated by locals because it is very sweet but also has a strong particular effect that can lead to unpleasant symptoms.
